The process begins with pesticide-free black soybeans and a unique koji culture, which are steamed and then fermented in clay vats under the warm Yunlin sun for 4 to 6 months. This slow maturation creates a naturally rich, nutrient-dense base. The extract is then cooked with Glutinous Rice and Licorice, giving it its signature silky texture and a subtle, lingering sweetness that perfectly balances its savory depth.
